Chicken Salad-Stuffed Avocados

The chicken is food which all we are interested to add our day to day meals. Most of the time, the chicken will be the main thing that we like to add our any special occasion. So this recipe definitely will be the main food for us. So this is the main food in Sri Lanka and many Asian countries. However, you all will be like to prepare this food in their kitchens. So chicken is very famous and important food which can add to our meals. Most of the time preparing a salad with avocados and chicken is a very important food. We can practice this food at home to add more nutritional value to be a healthy person.

Ingredients

  • 1 pound of boneless, skinless chicken breast
  • 1 cup of diced celery
  • ¼ cup of mayonnaise
  • ¼ cup of toasted chopped pecans
  • ⅓ cup of low-fat plain Greek yoghurt
  • 1 tablespoon of chopped fresh tarragon or 1 teaspoon dried
  • 1 cup of seedless red grapes, halved (optional)
  • ¾ teaspoon of salt
  • ½ teaspoon of ground pepper
  • 2 firm-ripe of avocados, halved and pitted

How to make

  1. Firstly take the chicken and put them in a large saucepan and add some water to cover them. When it came to a simmer over medium heat reduce heat to maintain a simmer, cover and cook until the chicken registers 160 degrees F with an instant-read thermometer, 15 minutes. When reducing the heat of meat, you can cut them as small pieces.
  2. Now add mayonnaise, yoghurt, tarragon, salt and pepper into a large bowl. Add the celery, cold chicken, grapes and pecans. Now mix them together.
  3. Now take an avocado and cut them into two parts. Then remove the avocado seed and add the mixture you have prepared according to the above steps.
